WITH ITS RAISE THE BAR PROJECT, COCA-COLA HBC CROATIA CONTRIBUTES TO THE CROATIAN GASTRO SCENE

Raise the Bar gives young talents in gastronomy a chance to sharpen their knowledge at prestigious universities around the world

More than a year ago, Coca-Cola HBC Croatia launched a project called Raise the Bar, which is dedicated to raising the quality of workforce in the hospitality and tourism sector, channelling the project objectives into three modules – the Raise the Bar Academy, intended for waiters, bartenders and baristas, collaboration with various Centres of Competence from the tourism sector, and scholarships extended to young talents in gastronomy for educational programs at the world’s best universities.

Nikolina Putica, a friendly young woman from Dubrovnik, is one of the young talents in gastronomy who has already had a chance to sharpen her knowledge at the prestigious academy Le Cordon Bleu, Istanbul, after receiving a scholarship awarded by the Budi Foodie foundation and the Raise the Bar project, at the 2019 Chef’s Stage congress.

“It’s hard to describe how I felt when I heard my name at the awards ceremony. It was a mixture of happiness, pride, and positive surprise. And, as we were expecting a single winner, we were genuinely surprised to hear that, thanks to the Raise the Bar team and the Budi Foodie foundation, it was not one but three finalists, including me, that got the opportunity to receive education at prestigious academies,” remembers Nikolina who returned to Croatia enriched with new knowledge. The other two scholarship recipients, namely Marina Levak and Tibor Valinčić, are yet to embark on their international venture.

After the initial positive shock subsided, Nikolina embarked on the venture of turning her wishes into reality. “Going away to the Le Cordon Bleu academy, followed by the practical training at Neolokal under the guidance of Chef Maksut Askar, was an important stepping stone in my professional development, as it gave me a chance to learn from the best,” says Nikolina. The training at the academy covered all types of dishes, including broths, sauces, meat and fish dishes, and desserts, and it consisted of a theoretical and a practical part, including performance grading. The aspects considered in the grading process were hygiene, organisation, technique, presentation, and taste. But it was not only the Academy that impressed Nikolina, she was also astonished by the city of Istanbul: “Living in a large city such as Istanbul offers new possibilities. I had a chance to experience a new culture, which enriched me as a person. I particularly cherish the memory of the people I met while being there.”

Despite the fact that her plans, like those of many other people, were affected by the corona crisis, Nikolina landed a new opportunity for cooperation pretty soon, and she is really looking forward to it. “I’m sure that, due to the circumstances, most people’s plans for this year changed, just like mine. Still, an opportunity presented itself for me to work on a project in Dubrovnik with Chef Darjan Urdih with whom I have collaborated before, which was an excellent experience. As the crisis hit the tourism sector pretty hard, he decided to open a small local store called Oaza – the Finest Grocery Store to support family farms, and olive and vine growers, whose offer would also include workshops and tastings, as well as sale of homemade bread.”

Although she had an opportunity to study and work abroad thanks to the scholarship received from the Budi Foodie foundation and Raise the Bar project, Nikolina sees her professional future in Croatia. “I want to develop professionally and build a career in Croatia, because I believe that there are many professionals here from whom I can learn,” said Nikolina with determination.

The Raise the Bar scholarship program will continue this year as well, and it will feature a novelty. More precisely, the project team plans to establish a foundation through which the scholarships extended to young talents in gastronomy will be funded. Interested applicants will be able to start submitting their applications for Raise the Bar scholarships in the autumn, and information about the upcoming activities planned under this comprehensive CSR program is available on the Raise the Bar website, and the project's Facebook and Instagram profiles.

“I would recommend to all young people with an ambition and wish to learn to apply for this scholarship, because by doing so they can open a new door for themselves as well as give an extra boost to our gastro scene,” concludes Nikolina smiling.
